This recipe is gluten free and dairy free which makes it great for the gluten free vegan lifestyle.
1 cup of gluten free oats
3 cups milk-I use Almond Breeze Almond Milk- you can use whichever milk you would like
4 tbsp. Organic sugar of your choice ( my son loves it sweet)
1 tsp. vanilla extract
1 tsp. cinnamon
Dash nutmeg (optional)
Combine all ingredients into a small/medium saucepan. (You may wish to soak the oats overnight so they can be extra tender and creamy as a result) I usually make sure that the ingredients are well blended before stove is turned on.
Once well blended, turn stove to medium (around 6 or 7 on an electric stove) and start to stir. Stir continuously until the mixture starts to thicken. This step can take a while so make sure to be standing there for a while. You can choose to just stir occasionally but I have found that when it is done that way, the oatmeal isn’t as creamy and thick. The whole process should take about 10 minutes.
Once the mixture is thickened, take off the heat and let it settle for about 1 minute. Your oatmeal is done…Enjoy!
Make sure to make this recipe your own. I enjoy from time to time adding other ingredients to this oatmeal to make it extra delicious. A small list is below:
Dried Fruit of your choice
Cream
Butter
Mashed bananas
Cut up apples
Fresh fruit that is in season
Apple sauce
If you like it extra sweet:
Brown sugar
Honey
Agave Nectar
Maple syrup/or pancake syrup of choice
