A great gluten free banana bread recipe need not be so hard to look for.
But it can be.
There is the concern that sets in with wondering if it will be as dense as a brick and taste like cardboard. What if it will turn hard as a rock as soon as it comes in contact with air? Or How about this…it will crumble as soon as you cut it because there is nothing to hold it together?
These are the many things that can run through our minds when we are on the internet searching one gluten free banana bread recipe after another. Trust me, I have been there.
Since starting my gluten free diet almost 5 years ago, finding a great gluten free banana bread recipe has been on the top of my list of things to find and master. Simply put I love Banana Bread! Really, who doesn’t?
The demand is high on finding a great recipe. Hopefully this will stop your search. I will tell you how I came across it.
Believe it or not, this amazing gluten free banana bread fell into my lap. My Latin, traditional mother, who is just learning how to cook anything gluten free to accommodate not only myself and my son but now my aunt who has had to recently change her whole lifestyle to eat a gluten free diet, decided that she was going to venture out and make our favorite bread into a gluten free version.
She opened up her treasure house of old family recipes and snatched this one from the vault! So the fact that I am even going to share this recipe with you is a miracle in itself. I am so happy to be doing it and so is my dear sweet mother, Pura!
So because of that I am naming this Gluten Free Banana Bread after her! My charismatic, full of life, full of love, four foot ten mother who gives a little piece of herself with everything she does, deserves full credit for what you are about to encounter. If you mix this recipe with extra ingredients of love, generosity and passion, it will come out just as good as my Mommy’s…
So without further ado:
Pura’s Perfect Gluten Free Banana Bread
½ cup vegetable oil 1 cup of sugar 2 eggs
3 or 4 bananas-mashed (best if really ripe) ½ tsp. salt 3 Tbsp. milk |
½ tsp. baking powder 1 tsp. baking soda 2 cups of GF flour (Pura used Pamela’s Baking mix)
1 cup chopped nuts Dash of nutmeg 1 tsp. vanilla extract (Pura used Dominican Vanilla- I swear it makes a difference) |
Pre-heat oven to 350 F.
In a large bowl, mix sugar and oil. Add eggs. Mix well. Add Bananas. Add dry ingredients, then milk and vanilla extract and nuts.
Grease and flour bread pan.
Bake 1-1/2 hours, until done. Check by sticking a butter knife in the middle of the bread to see if it comes out clean.
Your bread should turn out to be moist and Fabulous to the taste buds.
