Blue cornmeal is so delicious and easy to use. Not to mention
it is loaded with nutrients that make you feel great just for trying it. It is a wonderful alternative to spice up any recipe that calls for cornmeal. And it may even turn a few heads wondering what it is...hee hee.
My family thoroughly enjoyed this recipe and I hope you do too. It is amazing what you can whip up when you are not even thinking about it.
Here is my recipe:
6 pieces of washed, thawed Tilapia
1 Tbsp Olive Oil
Pinch of Sea salt
Pinch of Pepper
Jamaican Jerk Seasoning
¼ tsp of garlic salt
¼ - ½ tsp ground pepper seasoning of choice
½ - ¾ cup of blue cornmeal
(I purchase mine at the Dekalb Farmer’s Market here in Atlanta. You can most likely find yours at a local natural food store or Farmer’s market as well.)
¾ cup of unsweetened almond milk (can use any milk)
Olive Oil (or Veggie) spray for pan frying
(or you can bake)
Set freshly washed, thawed Tilapia on a plate and sprinkle with pinch of seasalt, pinch of pepper and drizzle with olive oil. Set aside.
Take a large skillet and let it heat up over medium high heat. Spray with Olive Oil/Veggie spray. I do this to cut the fat in cooking with oil. While you are waiting for skillet to heat up, create the mixture by taking a large plate and adding the cornmeal, garlic salt, pepper, and Jamaican jerk seasoning to taste. I like mine spicy so I add a lot. Mix together and set aside. In a large enough bowl for dunking, add the almond milk or any milk.
This is the fun part.
Dip the tilapia into the milk and through the cornmeal mixture until well covered. Place in skillet to fry. Repeat until all the pieces are done. Reduce the heat a little to medium and allow to cook until the fish is completely white in the center. Serve immediately.
And that is it!
